Chasing Brourbon

Oh man…if you don’t know about Buff Turkey you’ve been under a rock.

 

Short version is that before the expansion at Turkey and while their fermenting tanks were down; Turkey contracted Buffalo Trace to make distilate for them to sustain no-gaps in production. The 73/13/12 Turkey mashbill with BT grain and yeast.

This DID NOT use the proprietary WT yeast and probably whey Turkey off loaded it all

I was early to the selection of these and many people said at that price they would probably pass…..between the time I selected this and its release more and more became aware of what incredible Bourbon this is and EVERYONE wanted as many as they could get

People were posting on secondary for this bottle from barrel 28M before it was even released and offering over $900 for a bottle….at this point I punted my tater idea and created the First of a series of Chasing Bourbon “Bearer Bond Series” and a sticker that cracks me up to this day

This visit marked my second and third barrels with Dark Arts. Dark Arts Whiskey House secret sauce is their finishing. We had been talking for months about doing a white port/red port rye and when I got there….I didn’t like ANY of them.

One of the best things about doing a pick with Dark Arts is they put everything they have ready to bottle out and it’s like an endless buffet. It’s almost impossible to NOT find something you like and this visit was proof of that.

After thoroughly going through EVERYTHING, we actually were going to pass on a SIB or finished barrel….then I saw a box in the corner and asked “what are those?”

Those were a box of 11-13yr rye’s that they hadn’t gone through and put in the rotation. We broke out the box and went through everyone….and this TRIN-5 was unreal. Like no Rye I’ve ever had. At 107 proof it had the mouth feel of a 120+ and drank like a 95 proof. I would have NEVER guessed this was a 95/5 MGP rye. Completely mind blown

I’ve got mad respect for Macauley and love what he does. I shot him this Tater Sticker for his 👍🏻 before I put his photo on a bottle. He loved it so much he asked for the art file and had it printed on larger format canvas and has it hanging in the Tasting room….so if you’re ever there, you know where the “Supper with Macauley” came from

Buzzard Roost-
every one and then you stumble onto a Gem. Buzzard uses MGP re-barreled in custom ISC barrels using a toast profile that’s proprietary to them. The are identified with “BZ-X” where “x” denoted the flavor profile they are going for. All the secondary aging happens at Bardstown Rick Houses for that Kentucky aging you can’t get at MGP

This was probably the most underrated pick I’ve done with the highest “OH, Man I should have gotten more” after it was tried….Buzzard’s Roost #2 is going to be even more epic as we did some unique never-done-before things with them

Sourced from West Virginia this undisclosed Mash Bill Wheated Bourbon was pretty spectacular at selection and lived up to the expectations in the final product. Only draw back is only a few people were able to get one.

Oh man…this was an interesting pick. Lots of resistance from people who “don’t like Pursuit Double Oaked”. Pursuit Double Oaked are all a bit different. Kind of like Barrell Craft Spirits or Maker’s Mark Stave series. How?

They are 3-barrel micro blends, then re-barreled, then a finishing staves added. With this many variables each final barrel is radically different.

Mashbill-
50% Undisclosed TN 80/10/10 rye bourbon
33% BBC 72/18/12 rye bourbon
17% Finger Lakes 70/20/10 wheated bourbon
💥This was blended and put back into a The Undisclosed TN 80/10/10 ISC #3 char barrel and then the Rickhouse Stave was added

And I’ve been told by a few this was the best tater they’ve ever seen….so many easter eggs.
